Well finally, I am back to my idea of getting some easy to make summer eats to you! Surgery and tooth extraction have hampered my schedule…
With the fresh zucchini coming on, I thought I’d try some fresh raw zucchini salsa. The idea came from the Alive magazine, but I have changed several things. It is easy to make, particularly if you have a food processor, tastes great, and keeps in the fridge. Mine is now 3 or 4 days old, and still yummy. I prefer to use the smaller zucchini.
Raw Zucchini Salsa
4 cups of shredded(use the large shred attachment) zucchini, or 4 cups finely chopped zucchini
1 green pepper (same directions as above)
1 large tomato, finely chopped
5 tbsp. shredded red onion
5 tbsp. lime juice
1 1/2 tsp. cumin
3 tbsp. minced fresh cilantro
1 1/2 tsp. unrefined salt
Mix all ingredients together well. Adjust seasonings. Store in covered glass jar in fridge. Makes about 5 cups.
Use with corn chips, as a dip, in wraps, as a side dish, or on open face pizza. Makes a great little gift as well.
A great way to use up all of that zucchini.
