Raw Salsa!

Are you concerned about getting enough iodine in your diet to counteract the radiation from the Japan nuclear event? Then you will appreciate this salsa, with natural iodine from the sea in for form of sea vegetables.

Fresh and easy to make, this salsa contains a load of wonderful nutrients! Use it with corn chips, on salad, as a dip, over eggs, on top of the mini pizza (recipe in an earlier post), or any other way you can think of, to add to your nutrition needs for the day.

2 cups finely diced ripe tomatoes
2 thinly sliced green onions
1/2 cup chopped fresh cilantro
1 finely diced large ripe avocado
2 tbsp. extra virgin olive oil
3 tbsp. organic lime juice
1/8 tsp. chipotle powder or to taste
1 tsp. ground sea veggies (see note)
1 1/2 tsp. unrefined sea salt or to taste

1 tbsp. chia seeds (to thicken up the sauce)

1. Combine all ingredients in a bowl and let sit for 1/2 hour to allow flavors to marry. Keep refrigerated.

Note: Purchase a package of Wakame or Kombu at your health store and grind or blend it to a powder, or very small pieces. Store in a glass sealed jar and use often.

Nature’s Medicine: sea vegetables provide a host of trace minerals, but most importantly, iodine, a necessary nutrient for thyroid gland function.
