Thank you! and Chocolate Chia Recipe

A big heartfelt thank you to all of you who attended the Natural Tips and Tricks for Healing presentation on April 12th! Much appreciated. I trust you will have some new ideas for improving your health, and some innovative solutions for those pesky little symptoms we often have to deal with, in lieu of purchasing over the counter or prescribed medications.

A special thank you to Beth Campbell for assisting me with the registrations and the book and food sales.

Through May to August I will be taking a break from these monthly talks, but will resume in September 2012. I will blog the date, topic, and location asap.

To help you with consuming more raw seeds, below is a recipe for chocolates made with chia seeds. Enjoy!


This treat is hard to keep around!

2 tbsp. coconut oil

2 tbsp. chia seeds

2 tbsp. ground raw cacao nibs

3 tbsp. dried goji berries

1 tbsp. honey or agave

1. Melt coconut oil in a double boiler. (one pan over another containing boiling water).

2. Add chia seeds and allow to stand for 5 minutes.

3. Add ground cacao, goji berries, and sweetener, and combine.

4. Pour into paper mini muffin cups, placed on a flat surface, and refrigerate until set.

You will want to triple this recipe and freeze some for treats! It is SOOO yummy.

Variations: Substitute the goji berries for dried blueberries or other dried fruit of your choice. Add chopped raw nuts and/or other seeds, and increase the oil, cacao and sweetener slightly.
